I’d love to see the epigenetic impacts incorporated into a study comparing these new plant-based burgers vs. grass-fed/pasture raised beef vs. large scale feedlot processed beef. Would be interesting to see if the environmental context of how these plants and animals lived and died makes any difference on human health outcomes. Kind of hard to do a score tally without a more complete view. Hopefully down the track we’ll understand these things better and be able to strike a less binary point of view that helps create ecological harmony.
